Information and preparation

Buna comes from Gedeo, in southern Ethiopia, the birthplace of coffee itself. The wild Heirloom varieties — unselected native genetics — grow at 2,000 to 2,100 metres in extraordinary biodiversity. The washed process removes all the fruit pulp before fermentation, leaving total clarity in the cup: fresh orange, rose petals, a green-tea backbone, and a gentle vanilla that emerges as it cools.

Best brewing methods:

Filter (V60, Aeropress, Chemex) — Where it shines most. Water at 94 °C, medium grind. Ratio 1:15.

Cold brew — Orange and vanilla take centre stage when cold.

Not recommended: espresso (the washed process loses body under high pressure).
